Sweet TnT Post of the Day: King Crab - Our Hero!

Eating healthy has always been a challenge for many of us. The temptations are high, of course – who wants to go to McDonalds’ and get the salad instead of the double cheeseburger that’s calling your name? Think about it: in America, it is easy (and inexpensive) to eat good but not necessarily good for you. Quick facts that we uncovered: in the local supermarkets, a 1.5 pound package of frying chicken (the legs, thighs, and wings portions) is $5.75. The same package of chicken breasts, a leaner cut, is $7.12. The whole wheat and whole grain breads cost $1.25 more than the plain white bread. Same for flour – white bleached flour is $3.29, per pack, it’s whole wheat (and decidedly healthier) counterpart is $4.79. Are you noticing the pattern? Not to mention that for the most part, the things that are easiest to get on the go, particularly in urban areas, is fast food. Just some food for thought. (As an aside, here are some fast food healthier alternatives.)

This past week, we have been building our recipe base to keep bringing you delicious eats to try at home with your loved one(s). Today, we keep it light and relatively simple, with our South Beach Diet inspired King Crab Spring Salad. Aside from being utterly yummy, king crab is rich in Omega 3 fatty acids, and low in fat and calories. Serve with a Mango Spritzer – 1 part mango nectar, 1 part tropical fruit seltzer – it’s the perfect lunchtime island getaway.

King Crab Spring Salad
Serves 2

King Crab Spring Salad

Ingredients
½ teaspoon extra-virgin olive oil
1 tablespoon cilantro, chopped
1 ½ tablespoons fresh lime juice
¼ teaspoon minced garlic
¼ teaspoon minced ginger
½ small green onion, chopped
½ tablespoon mango nectar
½ tablespoon low sodium soy sauce
pinch white pepper
1 pound king crab legs, steamed and shelled
½ tablespoon red pepper, minced
Mixed greens

Instructions: In a large bowl, whisk the lime juice, green onion, cilantro, olive oil, garlic, ginger, mango nectar, and white pepper together to make a marinade. Rinse the crab meat gently in cold water, drain, and set aside to chill for 15 minutes. Add ¼ of the marinade, stir gently, and chill for 15 minutes more. Place two serving dishes with the crab meat to chill.

To serve: On each of two chilled serving plates, place a bed of mixed greens and spoon the crab meat onto the lettuce. Serve.
